Sun King Brewing, often tapped as the brewer of “Indiana’s Beer”, has never been content with as-is. This was true when they successfully pushed for a new bill that would allow Indiana microbreweries to triple the amount of beer they sell in-state to 90,000 barrels from 30,000 barrels and it’s true now with their next vision of expanding their production to include a line of distilled spirits.
Although we’ve enjoyed their beer for close to a decade, it wasn’t until 2015 when we first got to know the fun folks of Sun King while teaming up to expand their downtown brewing capacity. They’ve always had a spirited appetite for growth and so it came to no surprise to us when they came to us with a new commission, a destination distillery and tap room in the heart of one of the fastest growing cities in the state.
They had been incubating on the idea of a destination distillery since their early days, but were waiting for the right time and place to present itself. When they learned about Midtown Carmel, the brain child of hometown developers, Old Town Development Group, they knew this was their place.
As an anchor destination on the city’s plaza, DELV designed the new 15,000 SF two-story distillery and taproom with a modern-industrial look utilizing materials such as metals, woods, and concrete to express its adjacent, historic railway. Punch through openings and glass wrappings will invite patrons into the craft of their operations, offering them unique visual access into the process behind the beverages they’ve come to enjoy. Thoughtful outdoor seating environments were integrated on the rooftop and lower level, connecting patrons to the lively activity along the Monon Trail and the Midtown Plaza.
Sun King’s newest destination will open Fall of 2017.
